Fermented Red Onions

Fermented vegetables are a healthy gut food. They are natural probiotics that enhance the health of your gut. Fermented onions are great on almost any dish: salads, quesadillas, tacos, breakfast dishes the possibilities are endless!

Ingredients: 

1 medium sized red onion

1/2 cup of water

1/2 of apple cider vinegar

1 Tbsp of sugar

1 1/2 Tsp of kosher salt

1 mason jar

 The Recipe:

In a pot combine 1/2 cup of water, 1/2 of apple cider vinegar, 1 Tbsp of sugar and 1 1/2 Tsp of kosher salt—bring it to a boil, and let it cool for a few minutes. In the meantime, halve and thinly slice a red onion. Place the cut onion in in a large heatproof bowl (we suggest a mason jar). Pour over the the onions, and cover it with a lid. Let it sit outside in room temperature for an hour, and then refrigerate overnight. You will be able to use the onions as soon as the next day. They will last at minimum of a month or two, but we predict you'll be so addicted that they won't last you more than a week!
